The flexible grill grate is the most useful accessory for your Kamado Sumo Junior and is designed to offer more grilling options than a standard grill grate. With this accessory, you can grill on two different levels simultaneously and choose between direct and indirect grilling for smoking and baking.
It includes two half-moon grates, two half-moon deflector plates, a multi-level grill rack, and a ring stand for various accessories.
Suitable for Classic Junior, not for Signature Junior.
With the flexible grill grate system, you can set it up in four configurations
DIRECT GRILLING
Direct grilling is what most people think of when talking about grilled food. If you want to use high and low heat simultaneously for direct grilling, the flexible grill grate can be used on both levels. Note that even with direct grilling, the lid should remain closed during cooking. This ensures that moisture stays in the meat, making it tender and juicy. The charcoal burns more efficiently, and the meat cooks faster with a more even result throughout the entire piece.
INDIRECT GRILLING
With the indirect cooking setup, your kamado Sumo works like an oven. By using the deflector plates, direct heat from the charcoal is prevented from reaching the meat directly. The heat is then transferred indirectly to the meat, similar to a convection oven. This allows for even and slow cooking, ensuring the entire piece of meat is cooked uniformly. In this setup, the meat pieces should always be placed in the center of the grill for the best results. This is the right method to achieve the juiciest and most tender outcome.
BAKING
This setup allows your kamado Sumo to bake almost anything you would typically bake in an oven, such as pizza, pie, or bread. The unique design of the kamado Sumo creates warm air currents, making the kamado function like a convection oven. This creates the even heat distribution needed for baking. The same design that makes your kamado Sumo the perfect pizza oven also makes it excellent for baking bread. When baking bread, a clean grill is more important than for other cooking methods. If you have smoked or grilled a lot, you might need to clean the grill by "burning it off" at a high temperature.
DIRECT AND INDIRECT
The direct/indirect setup allows you to switch between several cooking methods simultaneously. The lower grill grate can be used for searing with direct heat, and the upper grill grate can be used with a deflector plate for indirect cooking to slowly cook the meat. This is the best way to cook meat on the grill, achieving a wonderful sear with direct grilling and then allowing the meat to slowly reach the correct internal temperature with indirect grilling.
