DIRECT GRILLING
Direct grilling is what most people think of when they talk about grilled food. If you want to use high and low heat at the same time for direct grilling, the flexible grill can be used on both levels. Please note that even with direct grilling, the lid should be closed during cooking. This helps the moisture stay in the meat, making it tender and juicy. The charcoal burns more efficiently, and the meat cooks faster with a more even result across the entire piece of meat.
INDIRECT GRILLING
The indirect cooking setup allows your Kamado Sumo to act like an oven. By using the deflector plates, direct heat from the charcoal is prevented from reaching the meat directly. The heat is then transferred indirectly to the meat, similar to a convection oven. This allows for even and slow cooking, ensuring the entire piece of meat cooks uniformly. In this setup, meat pieces should always be placed in the center of the grill for best results. To achieve the juiciest and most tender outcome, this is the way to go.
BAKING
This setting means that in your Kamado Sumo, you can bake almost anything you would normally bake in an oven, such as pizza, cake, or bread. The unique design of the Kamado Sumo creates hot air currents that make the kamado function like a convection oven. This creates the uniform heat distribution needed for baking. The same design that makes your Kamado Sumo the perfect pizza oven also makes it ideal for baking bread. When baking bread, a clean grill is more important than with other cooking methods. If you've been smoking or grilling a lot, you might need to clean the grill by "burning it off" at a high temperature.
